Costco’s New Bakery Item Tastes Just Like Homemade

I’m from the South, so I have feelings about biscuits. I’m not snobby about them—as long as they’re fresh, buttery, and delicious, I’ll take a Bojangles biscuit just as readily as a homemade one. I make them at home from time to time (and my husband rejoices), but more often I opt to buy frozen biscuits or pick some up at a local bakery.

I heard rumors about the Costco bakery making biscuits, but I had yet to see them appear at my local store. On a recent visit, I finally spotted the biscuits at my Southern California Costco and immediately snatched them up.

Why I Love Costco’s New Bakery Biscuits

Costco sells its biscuits in the bakery section, next to its best-selling croissants (the stuff of legends), bagels, and pita bread. A clamshell of 10 large biscuits is a steal at $6.99. While I love Costco’s croissants, these biscuits are a great change of pace when I’m feeding a crowd for breakfast or brunch. It’s a joy to have another economical, homemade-tasting option in the Costco bakery section.

The biscuits remind me of better versions of KFC and Popeyes biscuits: They’re tall, fluffy, and buttery, with good buttermilk flavor. They aren’t especially flaky, but that’s okay with me—it’s just a different kind of biscuit. They’re easy to pull apart into two halves, making them ideal for spreading with jam or turning into a breakfast sandwich.

How I Serve Costco’s Biscuits

My biggest tip is to look at the sell-by date. Biscuits really don’t last. They tend to get stale and dry quickly, so I look for biscuits made that day if possible. The sell-by date should be three days after the biscuits were baked, so I do some quick math before I pick them up. I only buy what I need and use them within a day or two.

To revive the biscuits, I warm them in a 350°F oven for about 10 minutes before serving. For extra flavor, I sometimes brush them with butter. If I’m eating one or two, I microwave them for 10 to 20 seconds. I’m careful not to nuke them for too long, or they get tough.

I like to serve them alongside eggs and bacon with butter and jam for a classic breakfast, or split them open and top with egg, sausage, and cheese for a filling breakfast sandwich. If I end up with a couple of slightly stale biscuits, I toast them a bit, then top them with sausage gravy for a Southern classic.
