The Boxed Brownies So Good I Always Keep 2 in My Pantry

I learned countless things from my mom, and one of them was to always, always have a brownie mix on hand. You’re most likely going to have eggs and oil, which means you are less than an hour away from a freshly-baked dessert that everyone loves.

There weren’t a ton of options at our local grocery store growing up, so my mom always stocked Duncan Hines. Over the last several years, I’ve been loyal to Ghirardelli, especially the multi-packs at Costco, thanks to their rich chocolatey flavor. And then I tried Bob’s Red Mill, and now I can’t stop buying it. The mix makes a perfect brownie every time.

  • Price: $4 to $6, depending on the store

  • Why I Love It: It comes together and minutes and always makes brownies that are fudgy with a crackly top.

Why I Love Bob’s Red Mill Fudgy Brownie Mix

I’ve long been a Bob’s Red Mill fan, largely purchasing their specialty flours (no one can beat their gluten-free 1:1 flour) and grains (especially their oatmeal). Then they started making baking mixes, and I was intrigued. I tried the pancake mix, which is excellent, and then moved on to the brownie mix. I had to scoot my Ghiradelli boxes over to make room.

I’m not saying I’ll never buy Ghirardelli brownie mix again, because it is super solid, but I’ve really fallen in love with Bob’s Red Mill Fudgy Brownie Mix. It’s super simple to put together, just like other brownie mixes, and the results simply never fail.

That, and it makes my ideal brownie. They’re fudgy without swinging into gooey territory, with crisp edges and a perfectly crackly top. You can tell they use really good cocoa, too, with a rich chocolatey flavor and a short ingredient list. It nudges them a bit closer to homemade territory than other baking mixes.

Now I pick up a couple at a time to keep my pantry stocked, especially if they’re on sale. Everyone loves these brownies, and they’re easy to customize if you want to get fancy. You can add chopped, toasted nuts, chocolate chips for extra indulgence, and more. If you’re inspired to stock up, you’ll find Bob’s Red Mill Fudgy Brownie Mix at Kroger, Target, Whole Foods, and more.
